Maca Pancakes with Wild Blueberries

INGREDIENTS
DRY INGREDIENTS
  • 1 cup oat flour
  • ¼ coconut flour
  • ¼ ground flaxseeds
  • ¼ cups coconut sugar
  • 2 tablespoons maca powder
  • 1 tablespoon baking soda
WET INGREDIENTS
  • 4 eggs
  • 1.5 cups coconut milk
  • ¼ cups coconut oil or grass-fed ghee
  • 2 tablespoons honey
  • 1 cup frozen wild blueberries
INSTRUCTIONS
  1. Combine the dry ingredients in a large mixing bowl.
  2. In a medium bowl, whisk together all wet ingredients except for blueberries.
  3. Pour the wet ingredients into the dry and mix well until combined. Add blueberries.
  4. Let the batter sit and thicken for about 20-30 minutes before baking the pancakes.
