Lemon & Poppy Seed Energy Balls

INGREDIENTS
  • 1.5 cups quick oats
  • 1 cup shredded unsweet coconut (more for coating)
  • 0.5 cup honey
  • juice and zest of 1 lemon
  • 4 tablespoons coconut oil
  • 1 tablespoon poppy seeds
  • OPTIONAL: 1-2 scoops unsweet, unflavored collagen powder
INSTRUCTIONS
  1. Place all ingredients in a food processor and blend for about 1-2 minutes.
  2. Form 1 inch balls and roll them in finely shredded coconut.
  3. Keep refrigerated for about 1 week.
