Muscovado Chocolate Sheet Cake

INGREDIENTS
  • 2 cups all-purpose flour
  • 2 cups muscovado sugar
  • ½ cup cocoa
  • 1 teaspoon baking powder
  • 2 large eggs, room temperature
  • 1 cup butter, melted
  • 1 cup buttermilk (or milk)
  • 1 cup hot coffee (or water)
  • ½ teaspoon cinnamon
  • ¼ teaspoon cardamom
INSTRUCTIONS
  1. Preheat oven to 350°. Grease a 13x9 inch baking pan.
  2. In a large bowl, whisk the dry ingredients. Stir in eggs, melted butter and buttermilk.
  3. Add hot coffee or water; stir until combined.
  4. Transfer batter to prepared pan. Bake 35-40 minutes or until a toothpick inserted in center comes out clean.
  5. Cool completely in pan on a wire rack. Frost cake. If desired, decorate with sprinkles.
