This super quick and easy banana cake with pecans and walnuts is gluten-free (made with almond and oat flour) and a healthier version of a comfort cake – just what we all need now that fall is soooo close! This is one of my all time favorite cakes and I’ve been making it for years now. It’s everything you want in a cake: fluffy, moist and airy. And with warm spices like cinnamon, ginger, all-spice and nutmeg – paired with the pecans and walnuts – it is just perfect for this time of year. Which of course does not stop me from making it all year long… oh no, if you just leave out those spices, this cake will make a great addition to a summer picnic….
I started making smoothies in the morning a couple of months ago and been figuring out the best recipes that everyone in the family loves. It is just such a quick and easy breakfast snack in the morning, and even if we don’t have time for an actual breakfast at home before we go off to school/work, there’s always time to drink a delicious smoothie. That’s why I’m packing them with as many nutrients as possible and this Green Tahini Power Smoothie is one of my personal favorites, and everyone loves it. It’s made with bananas, spinach, tahini and matcha tea powder, and is therefore high in fiber, folate, antioxidants, B vitamins, and minerals such as potassium, magnesium and iron. The matcha tea powder adds just enough healthy caffeine for a powerful start in the day….
It feels like it was just yesterday that our sweet baby girl was born and it is so hard to believe it’s actually been a whole year! She turned one last month and we celebrated, of course, with cake. It was beyond debate that I would make her the prettiest little baby smash cake so she could dig in with her tiny chubby hands! And it needed to be healthy. So I made some minor changes to one of my favorite banana cake recipes (here with coconut and honey cream cheese frosting). It is made with whole wheat flour (or oat flour), bananas, apple sauce, canola oil and spices. Despite the sugar, all ingredients in this cake are super healthy and baby friendly. She loved it, and so did the rest of the family who ate the leftovers!
I think it’s about time I post this recipe. Banana cake with coconut. This is one of my favorites cakes that I’ve been making for years. It’s not just extremely delicious but super easy (all you need is 2 bowls and a whisk), quick and – healthy! Yes, healthy. And being pregnant (almost 6 months!) I’m always glad to have something for my sweet tooth to snack on that is not making me feel too guilty. And it is soo good, too – super moist, soft and fluffy.
