Coconut & Honey Oat Waffles (GF)

These Coconut & Honey Oat Waffles are one of my breakfast staples! So healthy – for a great start in the day – and the combination of honey and coconut is second to none. You might have noticed after I posted the Maca Pancakes with Wild Blueberries the other day, that I opened a new category in my recipe section – Breakfast. I cannot believe I went on for 5 years on this blog without that category! I am an absolute breakfast person, it seriously is the best meal of the day for me. So it was way overdue and I am starting to post more and more of the breakfast recipes that I make on a regular basis. And since I am focusing more on healthier recipes this year (don’t worry, there will still be a bunch of sugary and buttery layer cakes and other indulging treats), this fits just right.
What I love about these waffles is that they are made entirely of oat flour (I use the Bob’s Red Mill Whole Grain Oat Flour but they also have a 100% gluten free oat flour if you are allergic), and instead of regular milk, I used this awesome oat milk called Oatly (they are a very old, established Swedish company that is just expanding to the US and their milk is right now only available online, but will be available at Sprouts very soon! Seriously, this stuff is so unbelievably delicious you have to check it out). The combination of both oat flour and oat milk give theses waffles the ultimate oat flavor which is just oh so good. And not to mention the nutritious value!

Coconut & Honey Oat Waffles

Ingredients
- 1 cup oat flour
- 1/4 cup coconut flour
- 1/4 cup flax seed meal
- 1/4 cup shredded coconut
- 1/4 cup honey (a little more if you like them sweeter)
- 2 teaspoons baking powder
- 4 eggs
- 1.5 cups oat milk (Oatly)
- 1/4 cup coconut oil
Instructions
- Whisk all the wet ingredients together.
- In a large mixing bowl, mix the dry ingredients and add the wet ingredients.
- Stir well until well combined in a smooth batter.
- Let sit for at least 20 mins (the coconut flour needs to sit).
- Make waffles with your waffle maker.
