Plum Cake with Cream Cheese Custard

  • ½ cup heavy cream
  • 4 oz (1/2 package) Challenge cream cheese
  • ½ cup white sugar
  • 1 egg
  • ½ vanilla bean
  • 6-7 plums
  • puff pastry (enough to cover 9 inch spring pan)
  1. Cut plums in half and remove pit, then cut each half in 4 slices. Set aside.
  2. Preheat oven to 350°F / 180°C.
  3. Butter a 9 inch spring pan and line with rolled out puff pastry.
  4. Spread plums on top of puff pastry.
  5. In a medium bowl, whisk together the heavy cream, cream cheese, sugar, egg and seeds of vanilla bean.
  6. Pour filling over plums and bake for about 30 minutes or until the custard has set (depending on your oven).
  7. Let the cake cool down a little bit before removing the pan.
