I just recently posted these Vanilla Sandwich Cookies with sugar flowers on top and promised a tutorial. Here you go!
All you need is some Vanilla Fondant (I use Wilton), a small fondant rolling pin, some flower cookie cutters, a fondant ball tool and fondant shaping foam.
Knead the fondant until it is soft and smooth. Powder your working surface with either powdered sugar or corn starch and roll out the fondant as thin as you can. The thinner it is, the more realistic the flowers look. Cut out your first flower and put it on the shaping foam.
Roll the tip of the ball tool over each petal, applying only slight pressure, until the edges of the petal start to wave and get soft and thin.
You can see that the petals are nicely waved and look very flower-like. Now proceed with the remaining 2 or 3 flower layers, using the smaller cookie cutters. Again, roll out the petals with the ball tool.
Cover a regular muffin pan with aluminum foil and slightly push down the foil into the muffin molds. Put the sugar flowers into the molds and let them dry.
Once all your layers are dry, you can use royal icing to assemble to flowers. Stack them on top of each other, starting with the largest one on the bottom. You will need only a few drops of royal icing in the middle of each flower to glue them together.
Then you can apply some royal icing in the middle of the top flower and decorate it with some sugar or fondant pearls!
